For the sponge cake :
- 250 g butter (8.8 oz)
- 140 grams of powdered sugar (4.9 oz)
- 140 grams dark chocolate (4.9 oz)
- 5 egg yolks
- 5 egg whites
- 140 grams of soft flour (4.9 oz)
For the filling:
- 7 eggs
- 7 tablespoons of sugar
- 125 g butter ( 4.4 oz)
- 100 g white chocolate (3.5 oz)
For the glaze:
- 140 g of powdered sugar (4.9 oz)
- 1 cup of hot water
- 180 g dark chocolate (6.3 oz)
Whisk the Butter in foam. Then add the sugar and continue to whisk.
Melt the chocolate and stir in the butter. Then add, still stirring, one by one egg yolk. From the egg whites make solid foam add it to the mass and lastly add the flour. Stir well. In the mold for the cake put the baking paper, pour the mass and bake in a moderately preheated oven for about 40 minutes.
On steam cook the egg yolks with sugar. Add the white chocolate. In the cooled filling add whisked egg whites and foamy whisked butter, mix well.
Cooled cake cut in half (the lower crust make it thinner). Put the filling.
For the Glaze: the powdered sugar mix with 1 cup of hot water to melt the sugar. Add the chocolate and stir on the cooker until the chocolate is melted and get sufficient density for topping. Pour the glaze over the cake and decorate as you wish.
